SuperSeed Green Banana & Courgette Paleo Cake
This courgette cake is one of my favorite! It is a paleo cake as no sugar, grain, wheat is used. It is full of nutrients, protein and fibre, which is the basis of healthy living. This is the perfect cake for a cup of tea or coffee, if you need an afternoon bite of "pick me up" of if you have kids and you just want to conceal some veggie...
15 minutes preparation / 50 minutes baking
- 250 g SuperSeed Green Banana Flour
- 2.5 teaspoons baking powder
- 0.5 teaspoon of bicarbonate of soda
- 0.5 teaspoon salt
- 1 teaspoon of cinnamon
- 1 teaspoon vanilla extract
- 3 eggs
- 250 g dried date (it can be dried fig as well)
- 250 ml good quality oil
- 500 grated zucchini (no need to peel but need to squeeze some of the moisture out)
- 100 g chopped walnuts or pecans
- 50 g golden raisins - if you like
Preheat the oven to 180 C. Mix all dry items together in a bowl and put aside.
Put the oil, eggs and dried date in a food processor and blend it together. It is good when you see a white froth on the top of it.
When you are done add the mixed dry ingredients tablespoon by tablespoon, mix it well until you get a smooth(ish) dough.
Mix this with your courgette by wooden spoon. Finally add the nuts and the raisin. Stir it well together, don't be alarmed if your dough a little bit hard / sticky to mix, the vegetable will make the cake moist.
Get a tin approx. 20 * 25 cm, line it with grease proof paper and poor the mix in. Bake it for 40-45 minutes, it is well done if you try to stick a metal screw in it and it comes out clean.
When it is nice and firm outside (slightly dark brown) take it out from the oven an let it cool. Bon appetit !
